Yields of the fridge foraging adventure.
So… I had leftover sweet potato from Sunday night’s meal. As well as leftover asparagus also from that meal. I reheated those and ate them as is.
Then I found a leftover tofurky brat from a barbeque I had like three weeks ago, and since there was only a little mold, I cut it off, reheated it, and put it on a bun with hummus that was made last week.
I started making a salad out of the spinach, artichoke hearts, cucumbers, onions, tomatoes, etc, and then realized I had way too much to eat for tonight.
So I put it in my travel salad container, and now I have an amazing lunch already made for tomorrow. Which is good, because it’s going to be quite the stressful/busy day.
